Broccoli Tree Recipe

 

Broccoli is one of those vegetables that we know we should eat more of but its so tough to convince yourself to buy them at the store, since you have no clue how to make them palatable.

 

 

 

Yes studies show that 50% of people do not like the flavor of broccoli. But please eat your veggies!

 

I have been getting more and more into the Broil mode with the oven and had a head of broccoli to use in the refrigerator. I decided let’s try out a little bit of this and a little bit of that and see what happened. Yes, my husband laughs every time I say this because he is scared something for dinner may be a bit too interesting to eat.

Recipe:

Makes approximately 5 cups

 

½ pound raw broccoli bunch on long stem, cut off any leaves

½ cup pine nuts or walnuts, minced (recommend using a food processor)

1 Tablespoon olive oil or more if desired

Salt and ground pepper to taste



Preheat oven on Broil Low.

Cut and create mini trees with each broccoli crowning heads and stem. Sprinkle pan with half of the amount of the olive oil. Place broccoli trees on baking pan.

Sprinkle oil, salt, pepper, and nuts evenly across each broccoli tree. Place in oven and broil for 13-14 minutes.

Be careful not to burn the nuts and broccoli!

Remove from oven and allow to cool. Serve warm as a great side dish. Mix with Riced Cauliflower (see recipe in my book) or eat a la carte.
